Believe it or not, the concept of Meatless Monday dates back to World War I, when the U.S. Food Administration urged Americans to reduce consumption of key staples to support the war effort.
Fast forward to 2003, and the Johns Hopkins Bloomberg School of Public Health revived the campaign, this time with a focus on personal and environmental health.
In June 2011, the city of Aspen, Colorado, became the first city in the US to adopt Meatless Monday and the following year, the Los Angeles City Council unanimously passed a resolution for making every Monday a Meatless Monday.
