Make #meatlessmonday fun with chili poutine! Bake crispy fries, top with Tad’s Dad’s Chili, and add melty vegan cheese for a family-friendly, shareable meal.
Even the pickiest eaters will ask for seconds. Comfort food, made Colorado-style!
2 cups Tad’s Dad’s Chili (vegan)
4 cups frozen or homemade fries
1 cup vegan cheese (mozzarella or cheddar-style)
1 tablespoon olive oil (if making homemade fries)
½ teaspoon garlic powder (optional)
½ teaspoon smoked paprika (optional)
Salt and black pepper, to taste
Fresh parsley or green onions, for garnish
– Preheat your oven to 425°F (220°C).
– Spread frozen fries on a baking sheet. If using fresh potatoes, toss them with olive oil, garlic powder, smoked paprika, salt, and pepper before baking.
– Bake for 25–30 minutes, flipping halfway, until crispy and golden brown.
While the fries are baking, warm Tad’s Dad’s Chili in a saucepan over medium heat for about 5 minutes, stirring occasionally.
– Place the crispy fries on a serving platter or in individual bowls.
– Spoon hot chili generously over the fries.
– Sprinkle vegan cheese on top, letting it melt slightly.
Top with fresh parsley or green onions for a pop of flavor.
